INGREDIENTS
- 140g plain flour
- 300ml milk
- 2 large eggs
- 25g melted, unsalted butter
- 1 tbsp. caster sugar
- Toppings of your choice:
Strawberries, nutella or icing sugar

- In a large bowl, sift the flour along with a pinch of salt and the caster sugar make a well in the center.
- Add the eggs into the well and slowly whisk.
- Gradually pour in the milk, whisking constantly as you incorporate all the ingredients in the bowl to keep the batter smooth.
- Once the batter is smooth, set it aside to rest for 30 mins.
- Then whisk in the melted butter.
- Lightly grease a pan over a medium heat with some butter. With a ladle pour in a few tbsps of your batter and evenly coat the pan by swirling the batter around.
- Cook for roughly a minute until the surface is cooked and slightly golden then flip over and cook the other side. Continue this process with the remaining batter.
- Stack onto a plate and serve with toppings of your choice.
