French Crêpes
INGREDIENTS
  • 140g plain flour
  • 300ml milk
  • 2 large eggs
  • 25g melted, unsalted butter
  • 1 tbsp. caster sugar
  • Toppings of your choice:
    Strawberries, nutella or icing sugar

  • In a large bowl, sift the flour along with a pinch of salt and the caster sugar make a well in the center.
  • Add the eggs into the well and slowly whisk.
  • Gradually pour in the milk, whisking constantly as you incorporate all the ingredients in the bowl to keep the batter smooth.
  • Once the batter is smooth, set it aside to rest for 30 mins.
  • Then whisk in the melted butter.
  • Lightly grease a pan over a medium heat with some butter. With a ladle pour in a few tbsps of your batter and evenly coat the pan by swirling the batter around.
  • Cook for roughly a minute until the surface is cooked and slightly golden then flip over and cook the other side. Continue this process with the remaining batter.
  • Stack onto a plate and serve with toppings of your choice.
